This is the simplest of simplest recipes for any vegetable i suppose with not much spices to add quick ,simple and flavourful.
Ingredients:

Tindoora/Dondakayalu- 6 cups (sliced)

Onion – 2(medium size)

Red chilli powder – per taste
-
Salt – per taste
-
Oil – 3 tsp
Method:

First slice the tindoora vertically into 2 halves.Then slice each half into vertical slices or even u can cut them as round circles.

Heat oil nicely in a deep kadai.

Add the tindoora pieces and mix.

Keep a med-high flame and once in few min keep mixing the tindoora pieces
-
Once the tindoora pieces are little soft add onions and fry for another 10 minutes.

To this add salt and chilli powder.

This fry is easy and goes well with rice or any indian breads.
Note:

U can even fry without onions too.

I do the same way with potato,parval,raw banana,okra and the list goes on…..
