Chilli paneer

Chilli Paneer

Ingredients:

1. Paneer(Indian cheese) -10 cubes

2. Red Pepper -3 (Medium size)

3.Spring onions- 1 bunch(optional)

4.Onion – 1 (Big size)

5.Corn flour – 1/4 cup

6.Soya sauce – 1tsp

7.Salt – as required

8.Garlic – 2 pods

9.Green chillies -2

10.Ginger garlic paste -1/4tsp

11. Sweet and hot Tomato paste  – 1tsp

12. Oil – 2 tsp

13. Chopped Coriander leaves for garnish

Method:

  • To corn flour add salt,ginger garlic paste and roll the paneer cubes in this mix.
  • Stir fry  the  paneer cubes rolled in the flour in a pan by adding 1 tsp of oil.
  • Fry the cubes  till they are light brown in colour  on all sides and keep aside.
  • In a deep fry pan,add 2 tsp of oil.To this add chopped onions and fry till they are translucent.
  • Later add chopped garlic , peppers,spring onions ,green chillies,salt and fry them till they are  just cooked right.
  • To this add tomato paste,soya sauce and mix well.
  • Finally add the paneer pieces , adjust salt ,mix well and serve hot.
  • Garnish with chopped coriander leaves.
  • This can be had like an appetizer or a snack.
Note:
  • You can use any colored peppers(red,green,yellow) and also see that you do not overcook the peppers ,they should be crunchy

Palak paneer

 

  

Palak paneer is a famous paneer variety in North India everybody is fond of.This is my version of recipe for this curry.

Ingredients:

  1. Palak – 1bunch
  2. Paneer – 1cup
  3. Ginger garlic paste – 1tsp
  4. Green chillies (chopped) – 2nos
  5. Onions – 1(large)
  6. Tomato(chopped)- 1
  7. Turmeric – 1/2tsp
  8. Redchillipowder – 1/2tsp
  9. Coriander pwd – 1tsp
  10. Cumin pwd – 1tsp
  11. Whole garam Masala( optional)
  12. Cumin seeds – 1tsp
  13. Salt as required

Method:

  • Cook spinach to boiling water just for 2 min , blend into a fine paste in a blender( spinach puree) 
  • Heat oil in pan, add whole garam masala, cumin seeds,onions ,salt and saute till the onions are translusent.
  • Add ginger garlic paste,turmeric powder, tomatoes and fry till the tomatoes are fully soft and cooked.
  • Now add coriander powder,cumin powder,chilli powder,chopped green chillies ,spinach puree mix well ,cook till the oil  oozes out on the surface.
  • To this add fresh paneer pieces and cook for another 5 min and remove from stove.
  • Garnish with cream.
  • Goes well with any type of Indian bread.

Note:

  • Some like to use fried paneer pieces,its up to you either fried or as it is.
  • You can use garam masala powder instead of whole garam masala.

Chole paneer

 

  

One of the easiest and fast cooking curry for chapathis or rotis.

Ingredients:

  1. Kabuli chana(boiled) – 1cup
  2. Tomato puree – 1cup
  3. Ginger garlic paste – 1tsp
  4. Onions chopped – 1cup
  5. Green chillies – 4
  6. Paneer – 1cup
  7. Ghee – 2tsp
  8. MTR Garam Masala powder – 1tsp
  9. Chilli powder – 1tsp
  10. Salt to taste

Method:

  • Soak chana dal overnight and boil them in a pressure cooker till 3 whistles.
  • Boil tomatoes in water ,peel the skin off ,cool and make a paste – Tomato puree
  • Heat  2 tsp of ghee/oil  in pan ,add onions,fry till onions are golden brown ,add greenchillies,ginger garlic paste,Tomato puree and cook till the ghee comes up.
  • Now add the the boiled chana ,salt and mix well, cook for another 5 min.
  • To this add chillipowder and cook for another 2min.Add paneer cubes , garam masala ,mix well and add chopped coriander leaves and remove from stove .
  • Goes well with chapathis. 

Matar Paneer(peas with paneer)

 

Matar paneer 

This Punjabi dish, with some variation in spices, is  eaten over all of northern India.  Paneer is a fresh milk cheese with an interesting, slightly chewy consistency.Everybody enjoys paneer dishes,either vegetarian or non-vegetarian.

Ingredients:

  1. Paneer – 200gms
  2. Peas – 1cup
  3. Onion – 1(chopped)
  4. Tomato -1(chopped)
  5. Green chillies -2
  6. Coriander leaves – 2tsp(chopped)
  7. Salt to taste
  8. Chilli powder – 1/3tsp
  9. Turmeric/haldi – 1/4tsp
  10. Oil – 2tsp
  11. Garam masala(optional)

Method:

  • Heat oil in deep pan, add chopped onions,tomato and cook till soft.
  • Now add peas,red chillipowder,turmeric and mix well.Add i/3cup water and cover the lid.
  • Cook for 5min ,when peas are tender,add chopped green chillies and coriander leaves.
  • Add paneer pieces and salt and mix well.Cook for 2minutes.
  • Add garam masala ,mix well at this stage if u wish to.Romove from heat.
  • This goes well with parathas .
