Zucchini kurma 


This is one such recipe where zucchinis are cooked with other fresh vegetables like bell peppers,potatoes,carrots and tomatoes. A satisfying taste and filling side dish suitable to any time of the day.



  1. Fresh Zucchinis – 2

  2. Bell peppers – 2

  3. Baby Potatoes – 6  

  4. Carrot – 1

  5. Tomatoes – 6

  6. Onion -1

  7. Green peas – 1cup

  8. Red chilli powder – 1tsp

  9. Cumin-coriander-clove-cinnamon powder – 1tsp

  10. Amchur(dried mango)powder – 1tsp

  11. Salt to taste

For seasoning:

  1. Cumin – 1/4tsp

  2. Mustard seeds – 1/4tsp

  3. Curry leaves

  4. Oil -1tsp


  • Heat in a large pan over medium heat 1 tsp oil and to it add the seasoning ingredients.

  • To this add chopped onions and tomatoes and cook until they soften.

  • Next add green peas,and all chopped vegetables – zucchini,bell peppers,potatoes and carrots.

  • Add 1 cup of water and mix.Cover and simmer for about 10 to 15minutes on medium heat.

  • Stir in red chilli powder,salt ,turmeric,cumin-coriander,clove,cinnamon powder(CCCC)and amchur powder.Mix to combine and cook for another 15min covered on medium heat stirring in-between.

Goes well with chapathis or parathas(indian breads).
