Chekkalu

Chekkalu is a popular snack of AndhraPradesh,India . And here is a simple recipe and pictures shared by my sis-in law Madhavi. Try and enjoy this snack with a cup of coffee.

Ingredients:

  1. Rice flour - 1cup
  2. Fried chana dal (putani) - 1/4cup
  3. Chana dal (soaked for 30 min) - 1 tsp
  4. Green chillies  - 3
  5. Salt to taste
  6. Curry leaves - few
  7. Ajwain - 1tsp
  8. Butter - 1tsp

Method:

  • Grind the green chillies into a fine paste.
  • Grind  the fried chana dal into a smooth powder.
  • Mix all the above ingredients along with the green chilli paste into a thick dough by adding water.The consistency should be like shown in the picture  below (not too watery).

  • Make small round balls of the dough and press them on a greased plastic sheet with your fingers ,make small round sized puris(need not worry about the shape).
  • Deep fry in oil on medium flame till golden brown.


Brinjal Masala Bajji

 Brinjal Masala bajji is a very tasty snack . This tastes good with rice or chapathis too.Try this!

Ingredients:

  1. Purple brinjals -6(small)
  2. Onions -1(large)
  3. Besan - 1cup
  4. Rice flour - 3tsp
  5. Baking soda - pinch(optional)
  6. Salt - 1tsp
  7. Oil for deep frying
  8. Lemon juice - 2tsp
  9. Coriander leaves -  2tsp(finely chopped) 

For Masala:

  1. Ginger garlic paste - 1tsp
  2. Coriander seeds - 1tsp
  3. Dalchini - 1″piece
  4. Chillipowder - 1tsp
  5. Salt  - 1tsp

Method:

  • Slit brinjals length wise and boil them in water by adding little salt till they become slightly soft.
  • Grind all the ingredients for the masala into a smooth paste.

 

  • Heat 2 tsp of oil in a pan,fry the masala paste in low flame for 2min.
  • Remove from heat and stuff the masala in the brinjals.

  • Make a bajji batter by adding besan,riceflour,pinch baking soda,salt and water.
  •  Dip the stuffed brinjals in the besan batter and deep fry them in oil.
  • Finally to bajjis add finely chopped onions,lemon juice,coriander leaves(optional)by slitting them in the middle and serve.
  • Kind of elaborate method but its worth trying when u get bored with regular bajjis.
