Ridge gourd chutney can be made with Ridge gourd or even the skin alone when making curry with ridge gourd.
Ingredients:
-
Ridgegourd – 1
-
Onion – 1
-
Green chillies – 2 nos
- Roasted chana dal - 1tsp
-
Fried Cashews – 1tsp
-
Curry leaves – few
-
Tamarind pulp – 2tsp
-
Salt to taste
For Tempering:
-
Urad dal – 1tsp
-
Mustard seeds – 1tsp
-
Cumin seeds – 1tsp
-
Curry leaves – few
Method:
-
Cut Ridge gourd,onion and green chillies into fine pieces.

Add oil in a hot pan ,fry in low flame all the ingredients one after another.

Mix all of them together and grind them into a required consistency.
-
Temper the chutney with the tempering ingredients and enjoy with hot rice and ghee.

Ingredients:

Potatoes – 5(medium)
-
Onion – 1(large)
-
Greenchillies – 3
-
Ginger garlic paste – 1tsp
-
Coriander powder – 1tsp
-
Cumin powder – 1tsp
-
Red chillipowder – 1tsp
- Turmeric powder – 1/4tsp
-
Salt to taste
-
Oil – 3tsp
-
Cumin seeds – 1tsp
-
Mustard seeds – 1tsp
-
Coriander leaves -2tsp
Method:
-
Boil ,peel and cut potatoes into small diced cubes.

Finely chop onion and green chillies.
-
Heat oil in pan , add mustard seeds ,cumin seeds .After they crackle,add onions ,salt and saute them till golden brown.Now to this add turmeric powder,ginger garlic paste, green chillies and curry leaves in order.

Make a mixture of cumin pwd,coriander pwd,chillipowder by adding little water and add this to the above onions and mix well.

Finally add the boiled potato cubes ,mix well till the masala coats well and cook for about 3min.

Garnish with corainder leaves.
-
This goes with any bread or rice.
