Ridgegourd vada is a simple and very tasty snack that u can make with ridgegourd mixed with rice flour.This is liked especially by kids who do not like this vegetable.
Ingredients:
- Ridgegourd pieces – 1cup
- Ginger garlic paste – 1/2tsp(optional)
- Red chillipowder – 1tsp
- Rice flour – 4 tsp
- Cumin seeds – 1/2 tsp
- Salt to taste
- Oil for deep frying
Method:
- Cut Ridgegourd into very tiny pieces,add little salt and leave it for half an hr.
- Squeeze the water completely from the ridgegourd pieces and to this add chillipowder, ginger garlic paste,cumin seeds, rice flour and salt( if required)without adding any water.
- Make them like vadas on a plastic sheet and deep fry in oil.

- Goes well with any chutney or tomato ketchup.

I tried making this breakfast variety with semya,just like noodles boiling them first in water and adding the seasoning to it. I felt this tasted great than the regular semya upma.Try this way and enjoy!
Ingredients:
- Semya/Vermicelli – 2cups
- Green chillies – 3
- Turmeric powder – 1/2 tsp
- Cashews/Groundnuts – 1/2tsp
- Lemon juice – 2tsp
- Salt to taste
- Oil – 2tsp
- Water – 2cups
For seasoning :
- Chana dal – 1tsp
- Urad dal – 1tsp
- Mustard seeds – 1/2 tsp
- Curry leaves – few
Method:
- First boil the semya in 2cups of water until slightly cooked.
- Heat oil in a pan add the seasoning ingredients,groundnuts/cashews,green chillies and turmeric powder.
- To this add the cooked semya,salt and mix well and cook for 5min.
- Add lemon juice before serving.
