This ridge gourd curry is a very simple recipe made of ridgegourd and tomato.
Ingredients:
- Beerakayalu(Ridgegourd) - 4(medium size)
- Onions - 2
- Tomotoes - 2
- Turmeric - 1tsp
- Red chilli powder - 1 tsp
- Mustard seeds - 1/4tsp
- Curry leaves -4
- Oil - 2tsp
- Salt to taste
Method:
- Heat oil in a pan and add mustard seeds,curry leaves and to this add chopped onions,beerakayalu/ridge gourd and saute till tender.
- Add turmeric,then chopped tomatoes,salt and red chilli powder and stir.
- Cook till everything is cooked.
- This is regular and simple curry made in south indian households and tastes good with rice or chapathis.

This is one such recipe where zucchinis are cooked with other fresh vegetables like bell peppers,potatoes,carrots and tomatoes. A satisfying taste and filling side dish suitable to any time of the day.
Ingredients:
-
Fresh Zucchinis - 2
-
Bell peppers - 2
-
Baby Potatoes - 6
-
Carrot - 1
-
Tomatoes - 6
-
Onion -1
-
Green peas - 1cup
-
Red chilli powder - 1tsp
-
Cumin-coriander-clove-cinnamon powder - 1tsp
-
Amchur(dried mango)powder - 1tsp
-
Salt to taste
For seasoning:
-
Cumin - 1/4tsp
-
Mustard seeds - 1/4tsp
-
Curry leaves
-
Oil -1tsp
Method:
-
Heat in a large pan over medium heat 1 tsp oil and to it add the seasoning ingredients.

To this add chopped onions and tomatoes and cook until they soften.

Next add green peas,and all chopped vegetables - zucchini,bell peppers,potatoes and carrots.

Add 1 cup of water and mix.Cover and simmer for about 10 to 15minutes on medium heat.

Stir in red chilli powder,salt ,turmeric,cumin-coriander,clove,cinnamon powder(CCCC)and amchur powder.Mix to combine and cook for another 15min covered on medium heat stirring in-between.
Goes well with chapathis or parathas(indian breads).
